Keto Low Carb Caprese Panini Sandwich

Sandwich with 2 thick slices of Mozzarella Cheese and marinated Tomato Salad, covered in between 2 slices of 90 second bread. All get melt with your joy.

The relationship between Gooey Cheese and this sandwich is appreciable and cheese lover would never ever break up with it.

This Keto Low Carb Panini Sandwich is filled with thick slices of Mozzarella and a scrumptious marinated Tomato Salad. So first we smack some butter on some 90 second bread and then strike it on a Panini press.  Then we slap some mozzarella on that baby.  Then douche it with marinated tomatoes.

Just look at these marinated tomatoes.  This is more than just something to slap in a sandwich.  This is something I could eat on a shoe, thank you very much.  All it takes is a chopped tomato, olive oil, balsamic vinegar, and basil.

Now back to your regularly scheduled sandwich.

Include a lid and, obviously, more butter.

Then we press it down and the cheese starts to ooze, and the bread gets all crispy and buttery, and this low carb Panini just turned me back into a sandwich lover.

INGREDIENTS

  • Cut in a half bread
  • 2-4 Thick slices of fresh Mozzarella Cheese
  • 1/4 recipe Marinated Tomato Salad
  • 1 tbsp softened Butter

Marinated Tomato Salad

  • 1 Tomato, chopped
  • 2 tbsp Olive Oil
  • 4 Basil Leaves, Chiffonier
  • 1 tbsp Balsamic Vinegar
  • Salt and Pepper to taste

INSTRUCTIONS

  1. For the tomato salad, combine all ingredients into a small bowl and let marinate for at least 10 minutes.
  1. Spread half a tbsp of softened butter on to half of the bread and place the bread butter side down on a Panini press.  
  2. Place the slices of mozzarella on top of the bread, and then add a few spoon full of the tomato salad.  Butter the other half of the bread and place it butter side up on top of the mozzarella and tomatoes.
  3. Press the sandwich down with the Panini press and let cook according to the Panini press directions.  

USEFUL TIPS

  1. If you do not own a Panini press, you could just cook it on the stovetop like you would do a grilled cheese sandwich.  I really like the texture the Panini press yields, though.
  2. Instead of a large tomato, you could use a handful of cherry tomatoes.  You could also use roam tomatoes.
