Are you also facing problem while making lunch for your kids? As your kids having selective choices and also want tantalizing meals every day, but you also don’t want to serve them load of carbs, so don’t get panic now! Your child will surely love these Best Low-Carb Chicken Nuggets.  

The best thing in these nuggets is their pork rind crispy coating, that will give more taste to them. I did two-step breading; beaten eggs and then crushed pork rinds. And I added seasonings to the chicken before crusting (breading) that will give an immense flavor to the snack.

Dip the seasoned chicken in beaten eggs, coat them with crushed pork rind and fry until golden brown. Simple!

I crushed the pork rinds in a food processor so it will become more fine to get crispy on frying.

To avoid the fat contents, I fried them in avocado oil in a pan. You can also bake these nuggets in oven. And you can also use skinless boneless chicken thighs instead of chicken breast.

INGREDIENTS

  • 3, 6 ounce Chicken Breasts , cut into 1 inch chunks
  • 2 eggs
  • 1 Cup Crushed pork rinds
  • 1 tsp salt
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Avocado oil for frying

INSTRUCTIONS

  1. Pour crushed pork rinds in a shallow bowl and add the seasonings. Mix well. Add the beaten eggs, in a separate bowl.
  2. Put the chicken into the egg mixture and mix to coat.
  1. In batches dip the chicken into the pork rinds. Toss to coat.
  2. Heat about an inch of avocado oil in a cast iron skillet over medium-high heat. Fry the chicken pieces in batch (for two minutes per side) until it turns golden brown.
  3. Drain on paper towels.
  4. Serve immediately

USEFUL TIPS

  • You can also bake these nuggets in an oven for 15 minutes at 375F.
  • Crispy broccoli is perfect for side serve with them. Cook the broccoli, sprinkle some salt and bake it at 425F oven until it gets crispy.
